OUR PROCESS
Luxury wines are the result of elaborate artistry, an unending dedication to the winemaking craft. They are tales of age-old soil, lilting hillside and a tender breeze. To capture the novel of nature’s harmony inside a glass...this is what it means to make luxury wine.

— Terroir —
Gravel, volcanic ash and cobblestones provide the right drainage and encourage vines to grow in soil perfect for Cabernet Sauvignon.
An idyllic climate brings chilly nights and cool mornings, so vines can slowly coax the grapes to maturity.
For this ideal climate, gratitude must be given to San Pablo Bay, located three miles south of the vineyard. Wintry breezes flow off the water and blanket the vineyard, drawn to our vines by the warming effects of the surrounding hillside.
Amid moderate temperatures, grapes mature slowly and fully, so that at harvest sugars and skins are at their optimum.

Careful pruning is essential throughout the growing season for the welfare of the vines and fruit.
The water content of the grapes is critical; the irrigation is adjusted frequently to stay in perfect synchronization with nature.
The harvest must happen as the fruit in each section of the vineyard reaches its perfect maturity. Berries are picked from their vines late at night through the early hours of dawn, when fruit is still cool and can be more easily processed.
— FERMENTATION —
Stems, raisins, leaves and other foreign matter can materially alter the taste of the wine. This purity allows for the finest expression of the fruit.
The winemaker vigilantly controls the fermenting process, continually tasting the juice and inspecting the color.
— BARREL AGING & Bottling —
The juice is aged for years in wood barrels procured from various forests in France. These exotic barrels impart discernibly distinctive flavors to the wine.
After aging for at least two years, the wine is bottled and stored in a bonded, climate-controlled warehouse until it’s finally ready to be released and sold.
